Shrimp Fried Rice
1 onion chopped
3 tblsp oil- I used La Tourangelle Stir Fry Oil or grapeseed
1 lb shrimp, peeled or buy precooked shrimp
1 tblsp minced onion
1 cup fresh or frozen peas
1 tblsp minced garlic
3-4 cups cooked long grain rice chilled
1/4 cup stock or water
2 tblsp Braggs Liquid Aminos or Soy Sauce
1 tblsp Dark Sesame Oil
If you are using frozen peas – soak them in water to defrost while you start cooking.
Using a skillet add 1 tblsp of oil over high heat. When oil is hot, reduce to medium heat and add onion cook stirring occasionally for 3-5 min until soft. Using a slotted spoon put onions in a bowl
Add shrimp, if using cooked keep temp med and warm shrimp up for a couple of minutes. You can skip this but stirring in the pan will season the shrimp. With uncooked raise temp to high and cook until pink. Add to the bowl with the onions.
Drain the peas and add to the skillet. Cook for about a minute then add to the bowl
Add the 2 tablespoons of oil. Add garlic and ginger. Get the rice and begin adding to the skillet a little at a time, breaking up the rice with your fingers. Stir into the oil then make a well in the center. Break the 2 eggs into the well and scramble incorporating into the rice.
Mix in the cooked Veggies and Shrimp from the bowl. Stir in the stock then add Soy Sauce or Braggs Liquid Amino and the Sesame Oil. Mix together then turn off the stove and serve
